Blueberry Cobbler Smoothie {Dairy Free, Paleo, Keto}

Smoothies are my favorite way to pack in extra veggies when I’m feeling like a “treat” instead.

Cauliflower is a staple in every smoothie that I make. Any smoothie that calls for ice, I replace it with cauliflower.

I promise, you can’t tell!

Smoothies are a great way to hide veggies from picky kids (and adults!) too. If I have spinach on hand, I’ll throw a little in there too sometimes. Typically, I try to keep my smoothies pretty simple for my digestion’s sake. Too much going on can often lead to discomfort.

My go-to’s are quick and easy and take little thought. I usually grab some frozen cauliflower, some frozen chopped fruit,  yogurt (coconut milk or goat’s milk), cashews for extra creaminess and lots of ceylon cinnamon.

SIMPLE AND EASY!

The cauliflower that I use is either the bagged variety from the freezer aisle in my grocery store or fresh cauliflower that I’ve steamed and then frozen. The latter method helps with digestion, and I always try to do it when I remember. Sometimes, raw veggies can cause bloating and discomfort as well. Everyone is different!

This Blueberry Cobbler Smoothie tastes like dessert and the sweetness level is totally up to you! A few pinches of extra spices totally make this smoothie hit the spot! It tastes like more of a “treat” than a meal or snack, but it’s completely guilt free!

You have fiber from the cauliflower, antioxidants from the blueberries, fat from the cashews and yogurt (plus probiotics!), and anti-inflammatory properties with the ceylon cinnamon. Lots of the goods in this bowl!

Try it without adding anything else sweet and see how you like it!

Usually a few extra blueberries on top and some added granola is plenty sweetness for me!

  1. In a blender, add yogurt and coconut milk first.
  2. Follow by adding the remaining ingredients.
  3. Beginning at the lowest setting and working your way up, blend until smooth.
  4. Add additional milk or water, as needed to blend.
  5. Top with desired toppings such as, granola or frozen fruit.

Who doesn’t love a guilt-free dessert? I know I don’t!

I love making smoothies at home because I can control the level of sweetness. Sometimes, I get one and it is just so syrupy and overly sweet. Especially in the morning, that much sugar just doesn’t do much good!

This Banana Cream Pie Smoothie is free of dairy and sweetened with whole foods! You can have it for breakfast, a snack, dessert, or any time! Plus, there’s a secret ingredient that ups the nutritional value – cauliflower! If you’ve never put some in your smoothies, you have got to try this trick! It’s a good way to cut back on the sugar level in your smoothies, but still end up with a thick consistency!

  1. In a blender, add the ingredients, starting with the liquids. (Only use the maple syrup if you want it a bit sweeter.)
  2. Blend until smooth!

*I like to peel and quarter ripe bananas (and some unripe - for less sweet recipes) to store in the freezer so they're ready to go for smoothies. Cutting before freezing them is a must!

Key Lime Pie Smoothie {Dairy-Free}

It’s finally feeling like springtime in the Midwest! It’s the end of April, so I’d say it’s about time for some sunshine and warmer weather!

However, despite all of the snow and cold weather we’ve had the past few months, this smoothie can still brighten my day! The key lime flavor has me dreaming of warm sunshine and beaches every time I make it!

You might notice that there is a vegetable listed in the ingredients. That is not a typo! Cauliflower is a great filler in smoothies, and a better option that more sugary fruit. It’s like hidden nutrients! Give it a try – it won’t disappoint!

I’m so ready for some summertime!

* Depending on how juicy your lime is, you may need the entire lime. Pop it in the microwave for 5-10 seconds beforehand to make it juicier!

Chocolate Chip Cookie Dough Shake (Dairy free/Gluten Free)

Ok, Ok…let me start off by saying, this shake is NOT going to taste just like that cookie dough milkshake you had from ColdStone, Dairy Queen, Culvers (insert your favorite ice cream shop here) last week! It just isn’t. If you want to splurge and have that, by all means, you go and get that milkshake – AND ENJOY IT! However, there are people and circumstances that are not allowed to consume that for numerous reasons. This recipe is here to aid in that situation or when you want a guilt free indulgence!

Personally, I’m a huge cookie dough lover. HUGGGEEE. That was always my go-to choice of ice cream. This shake has turned into a favorite because of that. It reminds me of that addicting flavor, but it isn’t packed with a bunch of unhealthy junk! BONUS: there’s fruit AND veggies in it! SHUT THE FRONT DOOR. VEGGIES IN A MILKSHAKE?! Yes, you read that right, and please don’t let it scare you.

  1. In a blender, combine all ingredients (except chocolate chips) until smooth.
  2. Add the chocolate chips last, and blend for 20-30 seconds until they have broken up slightly.
  3. INDULGE!

*Feel free to use the whole banana! It will just make the shake thicker and have a bit more of a banana taste. If you don't want it thicker, just add a bit more nut milk!
