Dirty Cauliflower Rice
Ingredients

Hot Italian pork sausage
sub sausage of choice

tbsp
Avocado oil
sub coconut/olive

Large onions
about 3 cups – diced
6-8
Mini sweet peppers
about 2 cups – chopped

Jalapeño
deseeded, diced – optional
2
Garlic cloves
minced, sub 1 tsp garlic powder

Riced Cauliflower
about one head

tsp
Celery salt
2
tsp
Onion powder
1 1/2
tsp
Smoked Paprika
sub regular paprika
1
tsp
Black pepper
1
tsp
Dry mustard
1
tsp
Dried basil leaves
1/2
tsp
Ground cardamom
1
tsp
Pink salt
optional, if needed
Instructions
In a large saucepan over medium heat, sauté onions, peppers, and garlic in oil for 3-5 minutes or until softened.
Once the veggies have softened, add sausage to pan and begin to brown.
After 2-3 minutes of cooking, add the seasonings and cauliflower rice to your pan. Stir to combine.
Cover and cook for 8-10 minutes or until the cauliflower rice is tender.
Serve immediately or fill peppers with the dirty rice and bake them!
