Ingredients

Bottom Round Beef Roast
use whatever roast you like or whatever is on sale though!

Garlic cloves
minced / sub 2-3 heaping tbsp of minced garlic from the jar

Yellow or white onions
thinly sliced

Sweet onions
thinly sliced

Red onions
thinly sliced

Beef broth

cup
Coconut aminos
sub Worcestershire sauce if not following Whole30/Paleo diets

Balsamic vinegar

Onion powder

Thyme leaves

Instructions
For the Instant Pot version: Add the roast, onions, broth, vinegar, aminos, and all seasonings to the pot.
Cook for 120 minutes on High Pressure.
When the timer goes off, do a quick release.
Shred the beef to your liking and serve.
For the slow cooker version: Add all of the ingredients to the cooker and cook on low for 6-8 hours or high for 3-4 hours.
Shred and serve.
